Who it’s for: Anniversaries, grandparents, first-timers who want the One Famous Galveston Meal. The crab au gratin and the campechana are the canon orders.
When to skip: If you’re in beach clothes and a hurry — this is a sit-up-straight dinner. And skip it on a first-night whim in summer without a reservation; you’ll wait an hour watching other people eat snapper.
